Baked Halibut, Wilted Greens And Salsa
Verde (Serves 4)
4 x 180g Fillet of Halibut
20g Garden peas
20g Green beans
20g Mange tout
6 leaves baby gem lettuce
6 finely sliced salad radish
For the Salsa:
50g Caper berries
5g Basil
5g Chervil
5g Tarragon
5g Dill
5g Mint
20mls Lemon juice
300mls Olive oil
Blend the salsa ingredients for the
salsa. Place the halibut into a hot frying pan and sear on
both sides, transfer to baking tray and bake in a pre
heated oven, gas mark 8 for 6 to 7 mins. Using the same pan
add your greens and wilt using a little of the salsa,
season and serve in a neat pile on a plate, place fish on
top and drizzle salsa verde over.
